Sweetwater Tavern is an upscale-casual seafood restaurant and oyster bar opening March 17 at 150 Madrone Ln N in downtown Winslow, transforming the former Restaurant Marché space into a Pacific Northwest haven for fresh bivalves and local flavors.
Co-owned by San Francisco Bay Area chef Pete Osborne and Callie Tinney, the tavern draws inspiration from West Coast oyster bars like Swan Oyster Depot, featuring oysters from Hama Hama and Moonlight Oyster Co., seasonal wild fish, wood-fired burgers and steaks, and produce from Bainbridge farms like Butler Green and Loki.
The revamped space boasts a new 10-seat bar for interactive shucking, expanded indoor/outdoor seating including a larger sunroom and patio, and a lively bar scene with craft cocktails, tap beer, and seafood-friendly wines — all in a '70s PNW revival vibe where flip-flops meet gourmet plates.
Aimed squarely at locals with approachable, repeatable dishes and daily happy hour oysters, it's poised to fill Bainbridge's oyster bar niche while honoring the community legacy of its predecessor.
